  1. Preheat oven to 450°F. Line a sheet pan with foil for easy cleanup.

  2. Combine olive oil, garlic, smoked paprika, oregano, cumin, coriander, salt, and cilantro in a medium bowl and mix thoroughly.

  3. Add chicken, chickpeas, olives, tomatoes, and sourdough cubes to the bowl and toss everything together until well coated.

  4. Transfer mixture to the prepared pan and spread into an even layer, exposing the chicken thighs on top. Season with freshly ground black pepper.

  5. Bake in preheated oven until chicken is cooked through and bread cubes are crisp, about 20 to 30 minutes.

  6. Remove from oven, sprinkle with feta cheese, and cover loosely with foil for 5 minutes. Serve garnished with additional cilantro, feta, and lemon slices.
