  1. Cut the pork shoulder into thin slices by halving lengthwise, then slicing each piece thinly.

  2. Combine the marinade ingredients (grated pear, grated onion, ginger, crushed garlic, soy sauce, brown sugar, sesame oil, and gochujang) in a bowl. Add the pork and toss to coat. Marinate for 30 minutes to overnight for best flavor.

  3. Heat oil in a large non-stick skillet over high heat. Add the minced garlic and sliced onion, and cook for 2 minutes until the onion is translucent.

  4. Add the marinated pork and spread it out in the pan. Cook for 5 minutes, turning occasionally, until dark golden, caramelized, and cooked through.

  5. Top with sliced scallions and sesame seeds. Serve immediately with steamed rice or cauliflower rice.
